Top three healthiest breads of all time!
- 3 cups all-purpose flour
- 1.5 cups stone ground whole wheat flour
- One half cup of sourdough starter discard… see post here to make this.
- 2 tbsp potato flakes
- 2 tbsp diastatic malt powder- aka barley powder
- 2tbsp whole vital wheat gluten
- 2 cups warm water
- 1.5 tsp salt
- 1.5 tsp instant yeast (optional)
Knead by hand or mixer all ingredients for 10 minutes. Cover and rest on the counter for 2 hours until it doubles in size. Divide into 2 balls, then shape the balls into tubes and pinch the ends to make a point. Let the baguette rolls rest on the counter for 1 hour. After one hour, preheat the oven to 425 degrees. In the meantime, place baguettes on baking sheet in the freezer for 30 minutes while the oven preheats. After 30 minutes, remove the baguettes from the freezer, put 3 slices down the middle of each loaf and place in the oven. Bake for 25 minutes until lightly golden brown.
